Cabbage Rolls

 

2       large cabbages

3       cups uncooked white rice

4       lbs extra lean ground beef (uncooked)

1       725ml can of tomato sauce

1       796ml can of tomatoes (diced)

1       680ml can of spaghetti sauce

1       small can tomato paste

1       onion (diced)

2       teaspoons salt

2       eggs (beaten)

3/4    teaspoon pepper

2       tablespoons brown sugar

1       tablespoon lemon juice (optional or use lime)

 

Cook rice.

 

Combine salt, rice, eggs, beef, onion, diced tomatoes and pepper - mix well.

 

Cut center of cabbage out with a knife so leaves will fall off when cooking.

Peel off a few wilted leaves and submerge whole cabbage in boiling water.

Peal off leafs as then soften and separate.

Cut thicker part of leaf stems off after removing from boiling water.

 

Roll mixture into cooked/softened leaves.  Place rolls in large dish.

 

Combine brown sugar, lemon juice, tomato sauce/paste and spaghetti sauce, stir.

Pour over rolls (possibly add extra sauce).

 

Cook at 350F for 2 hours in a large covered dish.
